Chocolate Buttercream Icing - Happy New Year!
Wishing Everyone a very Happy New Year! Be safe and don't get bogged down in the resolutions :)
This chocolate buttercream is light and just sweet enough, without the chocolate being overbearing. I have been craving yellow cake with chocolate icing for weeks now, so I can't wait to bite into this! I went with a box cake but the icing is so easy to whip up that it's not worth skipping.
Chocolate Buttercream Icing (from Savory Sweet Life)
1 cup unsalted butter, softened
3 1/2 cups confectioners sugar
1/2 cup cocoa powder
1/2 teaspoon table salt
2 teaspoons vanilla extract
4 tablespoons milk or heavy cream (I went with skim milk because i forgot cream at the store - still comes out nicely but you know everything is better with cream!)
Cream butter in a mixing bowl until smooth. Add in 3 cups of sugar and the cocoa powder. Beat on low until the butter is absorbed into the dry ingredients.
Add in salt, vanilla and milk/cream and beat well, until combined. Add additional confectioners sugar if you need a stiffer icing. (I used the icing as is to spread and then added more sugar to pipe with)
