Tomato/Mozzarella/Basil 'Skewers'

I was looking for an easy and light app to make this weekend, and this is always a good combination. The way I see it, you just can't go wrong with cheese tomato and basil. Adam has been growing some veggies and herbs, but the tomatoes weren't ripe yet, so we only got to use the basil from the 'garden'. It's something that isn't too filling and is fun to munch on. I read about people putting these on wooden skewers for parties and such, but since it was just two of us I stuck them on toothpicks. I snapped this picture before I drizzled balsamic vinegar on the bottom of the plate, this lets the cheese soak all of the flavor up. But that's another good thing about this, it can be made in advance and placed in the fridge until you're ready.

Tomato/Mozzarella/Basil 'Skewers'
Large Tomatoes
Fresh Basil Leaves
Balsamic Vinegar
Wood Skewers or Toothpicks

Cube mozzarella and tomato. Cut large basil leaves in half. Place on your skewer or toothpick and arrange on a plate.

If using toothpicks, drizzle balsamic vinegar on hte bottom of the dish until it covers all servings. If using skewers, you can drizzle on top of them.
