Tortilla Pizza

These past 2 weeks I have been waking up at 5:30 to workout, going to work, coming home and going to the gym and then finally settling in for the evening. I haven't felt like getting to the grocery store much, so last night dinner came straight from the pantry and fridge. I have some ronzoni smarttaste pasta that I cooked up with pasta sauce, and I made a tortilla pizza with the lonely wheat tortilla that was sitting in the bin all by itself. Since I had the pasta sauce it just all came together that this was a perfect time to try this 'recipe' out. It was very easy to do and had a really good taste, Adam seemed to be pretty impressed by it and thats a plus since it took about 10 minutes to make with only a minute or two of prep time. Ill be buying more soft tortillas to keep on hand for this healthy snack/app/dinner.

Tortilla Pizza
Whole Wheat Soft Tortillas or Wraps (I used Extreme Wellness Wheat, 70 calories)
2.5 tbsp Pasta Sauce
1/4 cup cheese, shredded (I used a cheddar/mozzerella mix)
6 slices Turkey Pepperoni, all sliced into 3 pieces
White Onion, chopped
1 Green Onion, chopped
Red Pepper Flakes
(you can obviously use any topping that you have or hand or would like, this is all we had laying around. I think a buffalo themed one would be good, or a mexican!)

Preheat the oven to 370 degrees.

Coat a skillet with cooking spray and place on high heat. Add tortilla and cook a minute, until crisp, then flip and cook the other side for another minute, until the tortilla is no longer flexible (a little bit is ok but you want it crispy).

Place tortilla on a baking sheet and add pasta sauce, half of the cheese, pepperoni, and onions, then remaining cheese. Bake for 7-10 minutes, until cheese is melted. Sprinkle red pepper flakes on top.
