Chicken Phillies

Last night felt like the perfect time or a sub. Of course, it was my idea to make a BIG sub! And it had to be hot, so we came up with a big chicken philly. It was delicious! We only ate half, but it's always the case that we make too much food.

Chicken Philly
2 boneless chicken breasts
1 large loaf of cuban bread (it was the softest at the store or else I would have used a different kind)
1 bell pepper
1/2 white onion
1/2 container of white mushrooms
1/2 cup Fat Free Mozzerella Cheese
3 Tbsp light mayo
S&P

Slice onion, pepper and combine with mushroom in cooking pan over high heat. Chop Chicken and place in another pan over medium/high heat.
Preheat oven to 350 degrees.
When veggies are cooked and soft, combine with chicken. They should both be ready around the same time. Add salt and pepper to taste.
Cut bread in half and spread mayo evenly. Put half the mozzerella on the bread, then top with chicken mix and put remaining 1/4 cup mozzerella on top.
Place on baking sheet and put in the oven for about 5 minutes, or until cheese is melted and gooey!
