Breakfast Casserole

All families have different traditions when it comes to holidays and food, and I was so happy to be able to experience some of that with Adam's family this past holiday season. His mom made a great breakfast with french toast and this great casserole. The recipe comes from a book called "Treasury of Christmas" and it is very versatile in that you can add so many things to it. We stuck to the ingredients listed, but we halved the recipe, as it is enough for 6-8 people. We were warned that the eggs never seemed to be enough and I have to agree, because we almost used a whole carton for half of a recipe! Below is the original, plus my slight portion changes which would feed 2-4 people.

Breakfast Casserole
6 slices white bread - 3 slices
2 (12 Ounce) packages Jones All-natural roll sausage or 1/2 lbs ham, diced - Jimmy Dean Pork Sausage has a great flavor, we use 1 roll
1 can (8 ounce) chopped mushrooms - 1 small can
1 pound (16 ounces) cheddar chesse, grated - 8 oz
6 eggs - we used 9!!
2 cups light cream or milk - 1 cup fat free milk, plus 2 tbsp to go with extra eggs

Tear bread into bite-sized pieces and place in 13 x 9 inch baking pan. Crumble sausage, cook and drain. Spread over bread. Add mushrooms and top with cheddar cheese.

Beat eggs; add cream/milk. Mix well and pour over casserole. Bake uncovered at 350 30 to 45 minutes.
