Fancy Pants Loaded Fries

It's no secret that I love a good snack. I'm always looking for new snacks or ways to reinvent old ones. Loaded fries aren't anything new or really even exciting -  but this puts a new spin on the classic.

The mix of sweet and salty in this dish is really what makes it. Plus the melty cheese, of course. Using all pre-brought items also makes it so easy to throw together and makes the cleanup quick and pretty painless. You can really add anything that you want to this - I love onion so I used red and green, but you can omit either obviously. It may even be good to add a dash of red pepper to the fries while they bake if you want to add a little more spice.

I found the chipotle gouda wedge in the fancy cheese section of publix. Have you ever really looked around that case? There are so many fun cheeses! I also got a cranberry cheddar which I'm serving with some NY Everything Crackers (pretty much the best crackers ever. You can find them in the bread/pb/dried fruit aisle of your grocery store). Flavored cheese can ass a whole new dimension to your classic foods.

Fancy Pants Loaded Fries
Orieda Sweet Potato Waffle Fries
Publix Chicken Tenders (or your favorite grocery store)
Ken's Honey Mustard Dressing
Red Onion, 1 slice of the onion - cut thin and then chopped
Green Onion, chopped for garnish
Bacon Pieces, either bake and crumble your own or buy the bag of real bacon pieces
Cheddar Cheese, shredded
Chipotle Gouda Cheese (Boars Head), shredded

Toss the tenders in the honey mustard dressing. Then chop into smaller pieces.

Bake the fries and then from oven and place 3/4 of them in a casserole dish or baking pan (casserole dish for a smaller portion).

Place a little of each cheese on the fries, then some red onion, &bacon and 1/2 of the tender pieces. Top with remaining fries, then 1/2 of the remaining cheese, then the rest of the red onion, bacon and tenders. Place the rest of the cheese on top.

Bake on 400 for about 15 minutes, or until heated through and cheese is melted. Top with green onion.
