Put On Your Grass Skirt Chicken

I have decided to do all chicken this week using my homemade marinade concoctions. Tonights dinner came out really great, and its the first time EVER that I have successfully cooked juicy chicken! I am thanking the grill pan for this, that thing works wonders! I paired it will some roasted sweet potatoes and ate half for dinner and plan to take half for lunch tomorrow. It was really quick and made me think of summer, I hope she is right around the corner.

Put On Your Grass Skirt Chicken
1 Chicken Breast, pounded thin
1/4 Bell Pepper
2 Slices fresh Pineapple
S&P (a few turns each)
1 tsp plus 1/2 tsp Grated Ginger
1 tsp plus 1/2 tsp Ground Mustard
1 tsp plus 1/2 tsp Garlic Salt
2 tbsp plus 1 tsp honey
Low Sodium Soy Sauce
Brown Sugar (used separate)

Pound chicken until thin and even. Place in a bowl. Sprinkle both sides evenly with larger amounts of ingredients. Drizzle soy sauce on both sides and let marinate for 25 minutes.

Cut Pineapple and Bell Pepper and place in another bowl. Add smaller amounts of ingredients and drizzle with soy sauce.

Place grill pan on medium/high heat and coat with cooking spray. Place chicken in center and cook for about 5 minutes. Flip once the bottom is noticeably cooked and add pepper/pineapples to grill pan. Turn every few minutes until cooked on both sides, about 5 more minutes. Add a sprinkle of brown sugar on top of the chicken and let it melt. Remove from pan and serve.
